Baked Grits Cakes

Ingredients
Leftover grits
Italian Seasoned Bread Crumbs
2 eggs
2 tablespoons olive oil


Directions
Pour leftover grits into a flat dish. Put plastic wrap over it. Press plastic wrap down so that it is touching the grits on all corners. Place in fridge overnight.
Remove from fridge.
Preheat oven to 425 degrees.
Place 2 tablespoons of oil in oven safe cookware. Cover the bottom of the cookware with the oil.
Place in oven and let heat while breading the grits.
Cut grits into desired shapes.
Place grits cake in egg and coat well.
Then place in bread crumbs and coat well.
After 5 – 7 mins remove cookware from oven.
Place grits cakes in oil.
It should sizzle.
Place in oven for 7 minutes.
Remove and flip grits cakes.
Place in oven an additional 7 minutes.
Remove and enjoy!

*Note* – Ovens cook differently. You may need to cook longer or less depending on your oven. You be the judge. They should be golden brown.
