Potato Chip Chicken Casserole

Ingredients
2 cups cooked rice
3 boiled eggs sliced
2-3 cups cooked chicken
3 tsp lemon juice
¾ cup mayo
1 can cream of chicken soup
Salt & Pepper
1 cup shredded cheese
Potato Chips


Directions

Preheat oven to 375 degrees
Butter casserole dish
Mix everything except potato chips together in mixing bowl.
Pour into casserole dish.
Bake for 15 minutes. Remove and add potato chips and bake an additional 15 minutes.
Remove from oven and serve hot.

Tips – Keep an eye on the potato chips. If they start to get too brown then move to bottom rack or cover with aluminum foil.

Simple Sweet Potato Casserole

Ingredients
5 – 7 sweet potatoes
1/4 cup butter
1/2 cup brown sugar
1 teaspoon vanilla extra
Sprinkle of salt & pepper
1 tablespoon cinnamon
1/2 cup crushed pecans
1 – 2 cups miniature marshmallows

Directions
Preheat oven to 375 degrees
Peel, wash, dice, and boil sweet potatoes for about 20 minutes or until soft.
Drain and add in butter, brown sugar, vanilla extract, cinnamon, salt & pepper.
Mash everything together with a potato masher or mixer.
Pour into baking dish.
Bake uncovered for 20 – 25 minutes until marshmallows are toasted to your liking.
Cover to keep warm and serve.

Cornbread Pudding

Ingredients
1/2 cup butter melted
1 egg
1 can sweetened condensed milk
1 can creamed corn
1 can whole kernel corn (drained)
1 box Jiffy Corn Muffin Mix

Directions
Preheat oven 375 degrees
Mix egg, butter, condensed milk and remaining ingredients together.
Pour into a casserole dish and bake for 40 – 45 minutes or until browned. Serve warm and enjoy.

Baked Grits Cakes

Ingredients
Leftover grits
Italian Seasoned Bread Crumbs
2 eggs
2 tablespoons olive oil


Directions
Pour leftover grits into a flat dish. Put plastic wrap over it. Press plastic wrap down so that it is touching the grits on all corners. Place in fridge overnight.
Remove from fridge.
Preheat oven to 425 degrees.
Place 2 tablespoons of oil in oven safe cookware. Cover the bottom of the cookware with the oil.
Place in oven and let heat while breading the grits.
Cut grits into desired shapes.
Place grits cake in egg and coat well.
Then place in bread crumbs and coat well.
After 5 – 7 mins remove cookware from oven.
Place grits cakes in oil.
It should sizzle.
Place in oven for 7 minutes.
Remove and flip grits cakes.
Place in oven an additional 7 minutes.
Remove and enjoy!

*Note* – Ovens cook differently. You may need to cook longer or less depending on your oven. You be the judge. They should be golden brown.
