Fried Flounder and Squash

Ingredients

For Fried Squash
1 squash (or more if feeding more than 2)
1/2 cup buttermilk
1 cup all purpose flour
1 tablespoon baking powder
2 tablespoons cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder

For Fried Flounder
2 flounder fillets
1 – 2 cups of Corn Meal
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
2 tablespoons Cajun Seasoning
Oil for skillet

Squash Directions
Wash & slice squash. Place in buttermilk.
With clean hands make sure squash slices are covered in buttermilk and set aside to soak.
In a mixing bowl, mix together flour, cornstarch, baking powder, garlic powder, & onion powder.
Place squash in flour mixture.
With clean hands mix squash slices and make sure they are all fully coated.
Test oil by dropping flour. If it sizzles the oil is ready.
Once ready, drop squash into oil.
Cook a minute or two and then turn squash over and cook other side.
Once golden brown place squash on a paper towel lined plate.

Fried Flounder Directions
Pour buttermilk from squash on flounder fillets and let soak for about 5 minutes.
In a separate dish, pour cornmeal, garlic powder, and onion powder and mix well.
Place flounder fillet in cornmeal mixture and coat both sides.
Let flounder fillets rest for a couple minutes so batter will stick better when fried.
Place fillets in oil.
Fry 4 – 5 minutes each side. Once golden brown turn to other side.
Once done, remove to a paper towel line plate.
