Ingredients
  

  • 8 eggs
  • 1/3 cup milk
  • 1 tbsp sour cream
  • 1/2 cup shredded cheddar cheese
  • 6 English muffins
  • 2 tbsp butter melted
  • 6 cheese slices
  • 6 ham slices
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 350 degrees
  • Cut muffins in half
  • Brush butter over muffins and place in preheated oven until toasted.
  • Mix eggs, milk, sour cream, salt, pepper. Pour into a casserole pan or jumbo muffin pan. Bake for 20 – 25 minutes until eggs are firm.
  • If using casserole pan, cut eggs into desired size. Assemble sandwiches with egg, a slice of ham, and a slice of cheese.
  • Wrap each sandwich with plastic wrap or divide with deli paper so that the muffins do not stick together when frozen.
  • Place in the freezer. Store up to 3 months.

  • 1 10 – 12 inch Cast Iron Skillet

Ingredients
  

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 cup Swerve brown sugar
  • 1/2 cup allulose baking blend
  • 1 1/2 sticks melted butter

Instructions
 

  • Mix together the flour, baking soda, and salt and set aside.
  • Preheat oven to 325 degrees.
  • In another mixing bowl, using an electric mixer blend together the melted butter, Swerve brown sugar, and allulose baking blend.
  • Then add the egg, egg yolk, and vanilla extract. Blend well.
  • Add in the flour mixture a little at a time. Mix and then add more until it is all combined.
  • Add the chocolate chips.
  • Spread the cookie dough into the cast iron skillet.
  • Place in the oven for 25 – 30 minutes. Keep an eye on it. When it just turns golden brown remove from the oven.
  • The cast iron skillet will be hot. IIt will continue cooking as the cast iron skillet cools down.
  • Serve with your favorite ice cream and chocolate syrup. Enjoy!

  • 1 Slow Cooker

Ingredients
  

  • 4 chicken thighs with the bone in
  • 1 tbsp olive oil
  • 24 oz baby potatoes
  • 1 clove garlic
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter
  • 1 bottle Italian dressing
  • 3 tbsp grated parmesan

Instructions
 

  • In a skillet over medium heat, sear the chicken thighs in 1 tbsp of the olive oil. Cook about 3 minutes per side. Make sure the skillet it hot before adding chicken skin-side down. Season each side with 1/2 of the salt, pepper, and garlic powder.
  • Add clean potatoes to the slow cooker. Then add the garlic, the remaining garlic powder, onion powder, salt & pepper.
  • Cut 2 tbsp of butter into cubes or slices. Place in different areas over the potatoes. That way all the potatoes will be buttered when it melts.
  • Add the seared chicken thighs on top of potatoes.
  • Pour the bottle of Italian dressing over the chicken. Salt and pepper the chicken again if desired. Add 2 tablespoons of grated parmesan cheese over the chicken.
  • Cover and cook on high for 4 hours. Sprinkle with the remaining parmesan before serving. Serve and enjoy!

Notes

You can leave out the garlic clove and additional seasonings if you want. The Italian Dressing has plenty of flavor. I like everything with a lot of seasoning.

Ingredients
  

  • 3 chicken breasts
  • 6 oz cream cheese
  • 1/4 cup water
  • 1 packet taco seasoning
  • 1 cup cheddar cheese
  • 1 cup Salsa for topping
  • 12 6 in flour tortillas
  • 1 tbsp butter melted for tortillas if baking in oven

Instructions
 

  • Place the chicken in the bottom of the slow cooker.
  • In a mixing bowl, mix together cream cheese, water, and taco seasoning mix.
  • Pour on top of chicken. Cover. Cook 6 hours on low.
  • After 6 hours, shred chicken with 2 forks. Add cheddar cheese.
  • One the cheddar cheese is melted. Place chicken in flour tortilla. Wrap tightly. Place seam side down on a baking sheet.
  • Place the tortillas in a 425 degree oven for 6-8 minutes until the edges are golden brown. Remove and Enjoy!

Notes

This can be a low carb/keto meal if you use low carb wraps. The chicken mixture is low carb.
If you don’t want to put the tortillas in the oven. You can always warm your tortilla on a skillet on the stovetop instead. Then fill the tortilla and roll tightly. 
Add salsa for added flavor. 
These can also be frozen for another time.

Ingredients
  

  • 1 1/2 lbs ground meat of your choice I used ground Italian sausage
  • 1 onion chopped/diced
  • 1 clove garlic pressed/minced
  • 48 oz pasta sauce
  • 1 tsp oregano
  • 1 tsp basil
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1 lb spaghetti noodles These get cooked after sauce has cooked.

Topping

  • 4 oz cream cheese
  • 1 cup ricotta cheese
  • 2 1/4 cups mozzarella cheese Reserve 1/4 cup for top
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup grated parmesan cheese

Instructions
 

  • In a skillet over medium heat brown the ground meat. Once done, drain the grease.
  • Add in chopped onion and cook until soft. Then add in garlic. Add in salt, pepper, oregano, and basil. Mix and cook an additional minute. Remove from heat.
  • Add the pasta sauce to the slow cooker. Then add the cooked meat. Mix well. Cover and cook on low for 6 hours.
  • After 6 hours, bring a pot of water to a boil on the stovetop. Cook the noodles according to package directions.
  • While noodles are cooking prepare the topping. Mix all the cheeses together. Reserve 1/4 cup of mozzarella to sprinkle over the topping.
  • Once the noodles are done, drain. Pour them in the sauce. Mix well.
  • Spoon the topping onto the pasta sauce. It will be thick and lumpy. That is ok. It will smooth out as it melts. Top that with the remaining 1/4 cup mozzarella cheese. Then top that with parmesan cheese.
  • Cover and cook an addition 15 – 20 minutes or until the cheese topping has melted. Serve and enjoy!

Notes

I left out the basil and oregano in my video because I used Italian sausage. It is flavorful without adding anything additional.

I’ve always firmly believed it is not a whole chicken without the giblets. But here’s the scoop – some modern poultry producers have started removing them, which can be a bit of a letdown.

A little while back, I got my hands on a chicken that left me scratching my head because it had no giblets. Trust me; giblets are like hidden treasures inside your poultry. Think of them as a little bundle of goodies that can include the neck, gizzard, heart, liver, and sometimes even the kidneys. And guess what? I never toss these gems away because my four-legged companions go bonkers for them.

Bobbi Jo and her siblings are the proud owners of their very own slow cooker, just like the trusty Hamilton Beach one I use. I whip up a savory concoction by simmering those giblets with veggies and rice to pour over their dried kibble. The result? Some seriously ecstatic pups who give the drool-worthy stamp of approval!

But here’s the twist – giblets aren’t just for our canine pals. Have you ever wondered how your grandma whipped up that mouthwatering gravy? Well, chances are she worked her magic with a stock made from these very same giblets. And if you’re feeling a bit adventurous, you can take that liver and give it a quick pan-fry with some garlic, then slather it on toast for a delightful treat. Or dust it with flour and toss it in a pan with oil for a crispy and oh-so-delicious fried chicken liver.   • 1 whole chicken 4 – 5 lbs
  • 1 lb carrots peeled and sliced in half

  • 1 bag baby potatoes 24 oz
  • 2 tbsp poultry seasoning or rub
  • 1 tbsp smoked paprika (optional)
  • Salt & Pepper
  • 2 tbsp olive oil

Instructions
 

  • Place prepared potatoes, carrots, onion, and garlic in slow cooker.
  • Prepare chicken. Remove giblets. Dry chicken with paper towel. Rub olive oil on both sides of chicken. Sprinkle poultry seasoning or rub on all sides of chicken.
  • Place chicken on veggies. Sprinkle with paprika, salt, and pepper.
  • Place lid on slow cooker and cook on low for 7 – 8 hours. Enjoy!

Notes

There is no need to add water to the slow cooker. The chicken will make broth as it cooks. 
Cooking on top of the veggies keeps the chicken from getting soupy/soggy. 
You can place the chicken breast side up or down. Some people think putting the breast side down makes the chicken juicer. I’ve done it both ways and it is always juicy.
Chicken does not brown or get crispy in the slow cooker. It is still delicious. You can always remove it after it has cooked and place in the oven for a few minutes to crisp the skin. I never do. I find it is delicious anyway.

Ingredients
  

  • 1 lb dried red beans
  • 13 oz Andouille Sausage sliced
  • 1 ham steak (cubed) (Or ham shank)
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth or stock
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 tsp brown sugar or swerve brown sugar
  • 8 cups cooked rice for serving

Instructions
 

  • Sort and clean the dry beans. You do not have to soak these ahead of time when cooking in a slow cooker. It is your choice.
  • Over medium heat, cook the onion and bell pepper until soft. Add pressed garlic cloves and cook an additional minute.
  • Add the Andouille sausage to the slow cooker. Place the onion and pepper mixture on top. Add the remaining ingredients (except rice). Stir well.
  • Place the lid on the slow cooker, set the temperature to high, and cook for 6 – 8 hours.
  • Once the beans are tender then it is ready to serve. You can either pour the cooked rice in the crockpot or just dip some in a bowl and serve the red beans over it. Enjoy!

Notes

I always soak my beans overnight. If you soak them overnight, the next morning pour the water out and rinse the beans before putting them in the crockpot. Watch my video if you are unsure how to sort, clean, and soak beans. 
Even if you don’t soak the beans, be sure to sort and clean the beans before using.

Ingredients
  

  • 4 chicken breasts
  • 3 medium potatoes peeled or baby potatoes
  • 1 lemon sliced
  • 1/4 onion sliced
  • 3 cloves garlic
  • 2 sprigs rosemary
  • 2 cups chicken broth
  • 2 tbsp poultry seasoning
  • salt & pepper to taste

Instructions
 

  • Spray slow cooker with cooking spray or line with slow cooker bags or liner.
  • Place potatoes in the bottom of the slow cooker. Top with onions.
  • Press 3 cloves of garlic on top of potatoes. Sprinkle with salt & pepper.
  • Add chicken to the top of the potatoes. Add lemons and rosemary. Sprinkle with poultry seasoning.
  • Place lid on the slow cooker and cook on low for 4 hours.
  • After 4 hours check the internal temperature. It should be 165 degrees.
  • If done, remove the rosemary & lemon and serve. Season to suit your taste. I had to add additional seasoning. Enjoy!

Ground Turkey Taco Meat

This can be used for tacos, burritos, taco salads, stuffed peppers or is great on it's own. It can be frozen for up to 3 months.

Ingredients
  

  • 1 lb Ground Turkey
  • 1/2 Large Red Onion
  • 1 packet taco seasoning
  • 2 tbsp fresh cilantro chopped
  • 1 can whole kernel corn
  • 1 can black beans
  • 1 tbsp chili powder
  • 2 cups rice cooked
  • 1 tbsp olive oil

Instructions
 

  • Heat olive oil in a skillet. Once hot, cook chopped onions for 2 minutes.
  • Add ground turkey and cook until done.
  • Add taco seasoning. Mix well.
  • Add corn, black beans, rice, and chili powder. Mix well

Notes

The number of servings depends on what you use it for. If you use it for tacos it will make more servings that if you use it for burritos. 

Slow Cooker Taco Stuffed Peppers

Taco stuffed peppers in the slow cooker are sure to be a hit. These flavorful peppers are simple to make in the slow cooker.

  • Slow Cooker

Ingredients
  

  • 3 cups ground turkey taco meat Recipe on my webpage
  • 6 bell peppers
  • 1/2 cup cheddar cheese shredded

Instructions
 

  • Add 1/4 cup water to the bottom of the slow cooker.
  • Wash & clean the seeds and ribs from the peppers.
  • Arrange peppers in the slow cooker.
  • Place cheddar cheese in the bottom of each pepper.
  • Add taco meat. Press it down with a spoon to make sure the pepper is stuffed.
  • Top with cheddar cheese.
  • Cook on low for 4 1/2 – 5 hours in a covered slow cooker.
  • With a spoon, dip the peppers out. Enjoy!
