Oven Baked Garlic Parmesan Flounder for two

Ingredients for two

2 flounder fillets
Salt
Pepper
1/4 cup grated Parmesan
2 tablespoons gluten free bread crumbs
2 cloves garlic, minced
2 tablespoons Lemon Juice
4 tablespoons Olive Oil

Directions

  1. Preheat oven to 425 degrees. Spread 2 tablespoons of oil on baking sheet.
  2. Salt & Pepper each side of the flounder fillets.
  3. On a plate, mix together Parmesan, Bread Crumbs, & Garlic.
  4. Press the fish down into the mixture. Be sure to coat both sides.
  5. Place fish on oiled baking sheet. If there is any parmesan mixture leftover, press it on top of fillets.
  6. Bake for 20 mins or until golden brown. The fish should flake easily with a fork.
  7. Share your drool-worthy treat with all of your human friends.

Garlic Parmesan Zucchini for two

Ingredients

1 zucchini
1 Vidalia Onion
1 clove garlic, minced
1 teaspoon Basil
Salt & Pepper
2 – 3 tablespoons Parmesan

Directions
1. Heat cast iron skillet on medium heat. Add in 1 tablespoon olive oil.
2. Wash zucchini and slice.
3. Peel, wash, and slice 1 Vidalia onion.
4. Place onion and garlic in skillet. Add in basil, salt, & pepper.
5. Sautee a couple of minutes. Then, add in Zucchini. Mix all together.
6. Sautee about 10 minutes until soft. Then add in Parmesan.
7. That’s all there is to it. It makes an excellent side dish!

Blackened Catfish Nuggets & Cheesy Sausage Grits

Ingredients

For blackened fish

Catfish nuggets (You can use any type of fish you like)
Blackened Seasoning (Any brand you like)
Butter

Heat cast iron skillet on high heat. Once it starts smoking it is ready to drop the fish in. Cook for 3 minutes on each side. If it is a thick fish, cook a little longer on each side. It should be blackened but don’t cook too long because it will dry out.

For grits

Bacon
Andouille Sausage (I did not have any so I used 2 brats)
1 small vidalia onion

Fry bacon and set aside.
Sautee Sausage and Onions together and put in grits.

Grits (I made 4 servings. Follow package directions on your grits and for more servings)
2 tablespoons Butter (more if making larger servings)
1/2 cup cheese. I used cheddar but a smoked cheese would be best.

I used these grits and followed directions on pack. I always substitute chicken broth for half of the water. (For example is directions call from 2 cups water. Use 1 cup water & 1 cup chicken broth).
1/2 cup stone ground grits (I used Old Mill Grits from Pigeon Forge, TN)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup water
1 cup chicken broth

Once grits are done add in 1/2 cup cheese and mix.

My gravy may be confusing on the video since I messed it up and had to fix it. Here is how it is made.

Cajun Gravy Roux Ingredients (First you brown the roux which turns into gravy)

3 tablespoons all purpose flour
3 tablespoons butter or oil

Mix together until browned.

Cajun Gravy Ingredients
6 tablespoons all purpose flour
2 1/2 cups chicken broth
1/2 teaspoon pepper
1/2 teaspoon salt (You can add in pepper flakes, cayenne pepper, and other spices if you like. I left the hot spices out of the gravy and grits because Steve usually doesn’t like a lot of heat. The fish will have plenty of flavor.)

Add in 2 tablespoons of flour at a time. Mix in the chicken broth and seasonings. Whisk over medium heat until it thickens to your liking and the lumps are out. If it is too thick add a little more chicken broth. Remove from heat and pour into a gravy boat.

Once it is all done, dip the grits into a bowl. Pour some gravy on the grits. Top with catfish nuggets and bacon pieces.

Enjoy with all your human friends. They will all agree this is a drool-worthy treat.

Pecan Encrusted Fish

Pecan Encrusted Fish

Ingredients
4 pieces of fish
2 cups pecans
1/4 gluten free bread crumbs
1/4 grated parmesan
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 cup mayo
1/4 cup mustard
3 tablespoons maple syrup

Preheat oven to 375 degrees

Wash and dry fish.

Pour 2 cups of pecans in a food processor or blender.
Blend until desired texture.
Pour in a pie plate. Add in 1/4 cup gluten free bread crumbs, 1/4 grated parmesan, 1 tsp garlic powder and 1/2 tsp salt and pepper. Mix all together and set aside.

In another pie plate mix together 1/2 cup mayo, 1/4 cup mustard, and 3 tablespoons of maple syrup.

Dip fish into mayo mixture. Cover both sides with mixture.

Then place in pecan mixture. Cover both sides with mixute.

Place on a greased baking pan.

Repeat until all fish are breaded.

Bake for 15 – 20 mins in preheated oven. The fish is done when it flakes with a fork.

Remove from oven and share with all your human friends.

Homemade Bird Suet

Ingredients
1 1/2 cups suet or lard
1 cup crunchy peanut butter
2 cups quick cooking oats
1 1/4 all purpose flour
2 cups cornmeal
Optional Ingredients
1/4 cup dried fruit
1/2 Bird seed
1/4 Dehydrated meal worms

Directions
In a large pot melt the lard over medium heat.
Add in the peanut butter and heat until slightly melted.
Mix in oats, flour, cornmeal, and sugar.
If using optional ingredients, add those in.
Pour into molds or a cake pan.
Place in fridge or freezer until hardened.
If using a cake pan cut into desired sizes.
(You can also dip pinecones in this mixture while it is warm to make bird feeders.)

Meaty Surprise Dog Treats

Ingredients

3 cups whole wheat flour
1 cup old fashioned oats
2 eggs
1/4 cup peanut butter
1 1/4 cup water
1 pint chicken livers


Directions

Preheat oven to 375 degrees
Start off cooking the chicken livers (or whatever meat you are using) over medium heat until browned.
Mix all ingredients together until a dough forms.
Place dough on floured surface.
Knead the dough a couple minutes
Take a pastry cutter and cut the dough in half so it is easier to work with.
Roll dough out until thin.
Then cut the dough into long strips about 2 – 3 inches wide.
Crumble meat up on dough.
Slowly roll the dough over making sure to cover all the meat.
Take fingers and pinch together the seams and the ends.
Cut roll into about 1/2 inch pieces
Put on a parchment paper lined baking sheet and bake in preheated over for about 15 minutes or until lightly browned.
Let cool and share with all your doggie friends.

Honey Garlic Crock-Pot Chicken

Ingredients

4 chicken breasts
1/2 cup water
2 cloves garlic – sliced
2 teaspoons paprika
2 teaspoons basil
1 teaspoon salt
1 teaspoon pepper
2 tablespoons honey

Directions

This is super easy to make. All you do is place your chicken breasts in a crock-pot.
Add the water.
Then add the garlic on top of chicken.
Sprinkle all the seasonings on the chicken.
Drizzle honey over chicken.
Put lid on and cook on high 4 hours or low 8 hours.

The chicken will fall apart. I take a fork and shred the chicken. I use it on salads, in wraps, or on sandwiches. It can stay refrigerated for 3 days and then it can be frozen. It is always great to have some on hand for a quick healthy meal. Or you can serve as whole chicken breasts with side items if you don’t like it shredded.

Nothing but good (for you) Blueberry Banana Muffins – Gluten Free, Dairy Free

Ingredients for Muffins

3/4 cup of smashed banana
1/4 cup unsweetened applesauce
2 tablespoons coconut oil melted
1/2 tablespoons almond butter
2 tablespoons honey
1 tsp pure vanilla extract
2 eggs beaten
1/2 coconut flour
1/4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup fresh blueberries

Directions for Muffins

Preheat oven to 375 degrees & grease a muffin pan.
Combine flours, baking powder, baking soda, salt, and cinnamon and set aside.
Melt together coconut oil and almond butter over medium low heat. Stir until smooth.
Pour into a mixing bowl.
Add banana, apple sauce, vanilla extract and mix it all together.
Add lightly beaten eggs and stir until smooth
Add flour mixture a little at a time to wet ingredients and mix until combined.
Gently fold in blueberries
Fill each muffin well about 3/4 of the way full
Bake for 20 -25 minutes or until tops are set, golden brown, and passes toothpick test.

Note: We used a mini-muffin pan. I am not sure how it will turn out in a regular sized muffin pan. I know they turn out perfect in the mini muffin pan, though. Cooking time may vary based on the type of pan you use.

Lemon Glaze

Ingredients
2 tablespoon Honey
1 tablespoon melted coconut oil
1 tablespoon unsweetened cashew milk
Juice of 1 lemon
1/2 tsp pure vanilla extract

Directions
Mix together lemon juice, coconut oil, cashew milk, and vanilla extract. Work quickly or the oil with thicken as the cold milk hits it. If it does thicken just add to low heat until melted again. Then quickly glaze the tops of all muffins. This glaze is very thin and soaks down into the muffins.

the C.F. ABPA Shootout

Join us on Saturday, February 20, 2021 in Chattanooga, Tennessee for the 2021 Charlie Fouche APBA Shootout.  The “Scenic City” is a wonderful place to visit, so why not make a weekend of it and do some site seeing? It will be held in the Hamilton Room of Embassy Suites by Hilton located at 2321 Lifestyle Way Chattanooga TN 37421 from 8am – 7pm.

We welcome all ABPA players from novice – advanced. If you have never been to a tournament and are just curious and want to find out what it is all about, please join us. We would love to introduce you to the enjoyment of APBA tournaments.

The theme will be Non-World Series Playoff teams with a non-Hall of Fame franchise player optional. Frank Fumai our 2020 Champion will be defending his title.

The cost is $20 and includes food, snacks, & drinks. If you have special dietary needs, please let us know so we can accommodate you. Cookin’ with Bobbi Jo will be catering this event and we are always open to suggestions on foods and drinks. The more suggestions we have the easier it makes our event planning.

Covid-19 safety protocols will be in place. Hand sanitizer and masks will be readily available.

Low Carb Oven Fried Chicken


This is a delicious alternative to fried chicken. You can change the taste by getting different flavored pork rinds. I actually think this is more flavorful than fried chicken. The Mesquite Sweet BBQ pork rinds I used gives it a delicious flavor.



INGREDIENTS
8 oz pork rinds
1/4 cup Almond Flour
5 Chicken Breasts
1 egg
1 tbsp yellow mustard
1 tbsp spicy brown mustard
1 tbsp mayo
1 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon turmeric
1 teaspoon salt
1 teaspoon pepper
1 tbsp coconut oil

DIRECTIONS
Preheat the oven to 350 degrees Fahrenheit.

Place pork rinds in a blender and blend until crushed. If you do not have a blender you can use a Ziploc bag and a rolling pin. Just place pork rinds in a Ziploc bag and roll over them with a rolling pin until crushed into a powder-like texture.

Then mix the crushed pork rinds and almond flour together.

In a separate dish mix together the egg, both types of mustard, mayo, garlic powder, thyme, salt, pepper, turmeric.

Place coconut oil in baking dish and place in preheated oven about 5 mins.


Then place chicken in mustard mixture and coat.
Then dip in the pork rind mixture.
Place on hot baking dish. Repeat until all chicken is coated.
Bake for about 25 minutes. It may need to cook longer if you are using thicken chicken or chicken with a bone in it.

Let cool about 5 minutes and then serve!

Sweet Tater Liver Muffins

If you cannot handle the smell of liver then you may want to bypass this recipe. I can tell you that my dogs absolutely love these muffins. They are jammed packed full of healthy ingredients your dogs will love.

Ingredients
2 sweet potatoes cut up and boiled until softened
2 cups of whole wheat flour
2 eggs
4 slices of pork liver

Preheat oven to 375 degrees
Cook liver until no longer pink
Place in a blender and blend on medium for a minute.
Pour Liver Puree into mixing bowl.
Mash in the sweet taters
Then mix in eggs.
Slowly add in flour a 1/2 cup at a time.
Combine well
Then use olive oil to grease a mini muffin tin
Spoon mixture into muffin tin. About 1/2 scoop per slot.
Bake for 25 minutes
Let cool and share with all your doggie friends!
