Ingredients 14 oz bag of sweetened coconut 14 oz can sweetened condensed milk 1 tsp vanilla extract 2 eggs whites (room temp) 1/4 tsp salt
Directions Preheat oven 325 degrees. Pour coconut in a mixing bowl. Add in sweetened condensed milk & vanilla extract. Mix everything together and set bowl aside. In a separate bowl, mix together egg whites and salt. Mix on high until soft peaks form. (Egg whites will stand up on whisk) Gently mix egg whites into coconut mixture. Using a tablespoon or cookie scoop, drop a scoop at a time on parchment paper lined baking sheet. Bake for 20 – 25 minutes until coconut is lightly toasted. Remove, let cool, and enjoy!

So, a little about me. I’m a dog lover if you can’t tell. The top photo was taken on Bobbi Jo’s first day with us. We were introducing her to the pack. My husband is also a dog lover. We have 5 rescue dogs. Jackson was added to the pack in September 2021. We didn’t rescue these dogs; they rescued us. I’m a Christian who enjoys cooking, gardening, nature, and photography.
