Chicken Parmesan

2 servings

2 boneless chicken breasts
1 egg
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp basil
1/2 cup olive oil

Preheat oven to 425 degrees.
Whisk the egg, salt, pepper, garlic pepper, and basil together. Add in chicken. Coat both sides of chicken with egg mixture.
Heat olive oil in a skillet over medium heat.

1/4 cup Italian seasoned bread crumbs
1/4 cup parmesan cheese
1 tsp garlic powder
1/2 tsp basil

Mix breading ingredients together.
Then, coat both sides of each chicken breast with the breading.
Test the oil in skillet by dropping some breading in skillet. If it sizzles it is ready. If not, let it heat longer.
Once it sizzles, add in the chicken breasts. Cook 5 minutes each side.
Remove from skillet and place oven safe dish.

1/2 cup Marinara/Pizza Sauce
1/4 cup parmesan cheese
1/4 cup mozzarella cheese

Place marinara sauce over each chicken breast. Use whatever amount you like.
Add parmesan cheese to the top of each sauce covered breast.
Sprinkle with mozzarella cheese.
Bake in preheated oven for 20 minutes or until cheese bubbles. If you like your cheese toasted like I do, then once it has cooked for 18 minutes turn the oven on broil for 2 – 3 minutes. Keep a check on it to see when cheese is lightly browned.
Remove from oven. Let cool a couple of minutes and then share with all your human friends.
