I’m starting our blog recipes off with my Covid Chicken Soup recipe. I decided to name it Covid Chicken Soup because I wanted something to eat while I’m sick with Covid19. Homemade is always healthier than store bought. Check out my “Life” page for updates on my Covid19 recovery.
3 split chicken breasts (Or whatever chicken you have on hand)
Enough water to fill pot
1 tablespoon turmeric
1 tablespoon basil
1 tablespoon oregano
1 teaspoon salt
1 teaspoon pepper
1 clove minced garlic
Pasta (I used angel-hair but use whatever you have on hand) I usually use the no-yolk egg noodles.
How to make
Wash chicken and place in the pot. Fill pot up with water but leave about 2 inches from the top so it doesn’t boil over.
Mix in turmeric, basil, oregano, salt, pepper, and garlic.
Boil chicken until done. Usually about 45 minutes but I turned it on low and cooked it all day.
Remove chicken from the broth and shred the chicken and remove any bones.
Place the chicken back in the broth and bring to a boil.
Add in pasta. I just took a handful of pasta and broke in half and put in the broth. You can add as much pasta as you want. Boil for 10 minutes and then serve.
I would like to remind you to season to taste. Different people have different tastes. I usually prefer a lot of flavor and seasonings but I’m sick and can’t taste. So I’m not sure if it needs more salt, garlic, pepper, ect. That’s the great thing about cooking, you can season it to suit your own taste buds.
